I saw my old wordpress posts on google search results having dates along with them (just like the image below) I would like to remove these dates or update the dates of course I would like my posts look updated and increase CTR.

I found out that you can update the date by using the date publish feature on wordpress...

How will this affect my post ranking? or any SEO factor?

It can hurt it for sure.

    Here's a reason for this.

Lets say you published your post on 1.1.2015, then someone copied your content on 2.2.2015...

You're good to go because someone copied your content and you're the guy with unique content.

Now... You are changing the date to let's say 3.3.2015, and guess what? You are becoming the guy with copied content.

I tried to explain this on a very understandable way i think...

Note: You can update your posts, and google will take that post as update and as a fresh content, but don't change the date, it can do more harm than good.

    All the best,
    FilipMKD.

You can remove the dates from your posts in your WP theme (if you are using WordPress). If you are using a premium theme, there should be an option for this in the theme's settings. If not, just find the date code in the files of your theme and simply remove it (you can hire a programmer who can do this for $5 for you).

And I really don't think this can hurt your SEO, as Google will still have indexed your post since the time you published it. What could harm you maybe, would be changing the date of your post and not changing a single word in your post (but I'm not sure if even this could harm your site).

I totally disagree with this. If someone let's say, posts fresh content on 04.04.2015, Google sees it as the original post. If someone else copies and posts this content and manipulates the date to 03.03.2015 (not a big problem) Google sees this as the original? Don't think so. Posting dates can be easy manipulated in wordpress database.

just edit it and re publish, surely that will tell google that it is still original and they'll update it.

There's an option in Wordpress SEO plugin to remove the date snippets in G's results. If your site's content are mostly evergreen, then you could remove the date. If you work with time-based information, updating the post would be more appropriate.
