Say for example I had a sports website, and I wanted to post workout videos up. Instead of making my own workout videos, I just put links to another website's workout videos, would this legally be OK?

Say my domain was workout.com/videos, and on that page I had direct links to examplesite.com's videos. Would this be legally OK?

Next, if I were to directly copy an article from a website (but I left a backlink and gave the source) would it be alright to use because I cited my source, even without consent?

If you want to be 99.9% safe, you must not imply, explicitly or implicitly, that the videos you are linking to are your own.

The same goes with the article, save for the fact that you should add at least 1-2 sentences describing why you quoted that source.

But then again, that's only if you want ot be 99.9% safe. Considering where we are, what you've outlined should be sufficient. :p
