I am new to this and trying to understand.

From what i have read online websites can easily track where visitor is coming from and what websites he/she has viewed before.

It's done by cookies and http referers, i guess.

i want to redirect user from my site to destination site, but destination site can not know that visitor has ever been on my site.

    How it's done?

You can do it using cloaking. It help you hide your referrer

Thanks, is it only http referer that needs masking? Can destination site read visitor cookies and thus figure out websites he previously visited?
