As the title says, is it legal to publish gameplay videos, lots of these kind of channels are on the top, can I monetize these type of channels with adsense?

Yes u can do, People do it all the time .
Look at all the game videos on youtube
u should do it good luck

I don't think its illegal, but before you publish a game play video check out or ask the game owner/producer etc. it it is OK for you to publish the video.
