I think it ultimately comes down to testing, A lot of devices have unique fingerprint ID's so simply rotating the IP alone may not be enough in some cases. Some people swear by using iOS devices and others swear by other methods. The thing is about smm is that the battle is always changing. Updates after updates. You can find useful public information, but you will also need to test. Anti detect browsers are common among smm. Adspower, dolphin anti, gologin etc

Can you change the device fingerprint on iOS easily? Like logging into 10 seperate Google Search consoles on same iOS device with unique fingerprints (and changing 4g proxy IP between log-ins)?
Some people have a method, but I wouldnt say easily. I am not aware of anything mainstream.
I think there's not much difference. A proxy can cover anonymity regardless of the device. The iPad however is more likely to behave as mobile and consistent with mobile usage while it's more comfortable to use a laptop for multiple social media account because of the bigger screen and more multitasking capabilities. You may want to try on both so you can decide.
The functionality and anonymity should be similar on both devices since the proxy hides your IP. A laptop might be easier for managing multiple accounts due to better multitasking. You can try both to see which works best for you.
