So... (The keywords/domain are made up - so don't take this literally)

I have a domain like happydentist.com. I'd like to have it rank high for "Milwaukee Dentist". For now the main site is happydentist.com. Later I might want to have a Madison office, which I'll want to rank high for "Madison Dentist".

So I'm thinking for now, have milwaukee.happydentist.com 301 redirect to happydentist.com.

Later when I set up the madison subdomain, I'll set up madison.happydentist.com and remove the 301 redirect. My ranking for Milwaukee Dentist pointing at happydentist.com should then switch to milwaukee.happydentist.com?

    I hope this makes sense.

It maybe makes sense, but forget subdomains and instead have happydentist.com/city as you'll get juice from your domain then. (As long as you set up the right link structure, e.g. breadcrumbs.)
