I have a page that was ranking #2 for a pretty profitable keyword, but it slipped, and now has been de-indexed. However, that is the only page on the site not showing. In fact, I have a couple of other keywords ranking pretty well for other pages

Could I just create a new page on my site, do a 301 redirect to it, and transfer the link juice? Would this new page have a better chance of ranking?

Single pages don't get de-indexed. Your page or keyword has probably been penalized or is doing a Google dance. The reason for why it doesn't show up is probably because it's in page 700+ , continue backlinking, diversify and you should see your page re-appear #1.

Can anyone share any advice on how to 301 redirect just ONE page, and not the entire site?
