Sorry mate. Niche is something you have to decide by yourself.
Try to brainstorm unconventional niches no matter how ridiculous it may seem at first.
Every topic has a search volume.

Can you please clarify one point:

The health topics I want to write on, the competition is hard. But the main competitors do not have even one article, with my keywords, or at the most one short 3-400 word article broad coverage one. Still how do they rank on top?

Maybe based on their topical authority in the niche. If you want you can send me an example keyword you are targeting and I can give some suggestions.

In general, you should absolutely avoid the health niche as it's a YMYL niche and you need to work and spend a lot on your site to earn the trust of Google. You will need legitimate healthcare experts onboard your site for EEAT purposes, you need flawless content at the beginning and you have to buy backlinks worth 1000s of dollars for your site to even have a chance of making it to the front page.

My suggestion would be: Choose an evergreen hobby as your niche as it is safe and these niches always have low-hanging fruit keywords that you can target.
