Do you have idea how to track this worker automatically ?

any software to disable some windows function or app and record what he did in the computer ?

    Big thanks

If you are willing to spend some money download dot com seems to have a few nice things?
At first glance I would pick this one but you might want another.

FYI: I just googled "monitor computer activity" :p

You asked for ideas, here is one I hope will help you. :)

Odesk has a Instant messenger, which can be used for time tracking too. It would then take snapshots of the worker. I use it to track employees, who work from home.

Odesk does track time and take snapshots of what he did on the PC.. If you want every word he types, you might need a keylogger tool.

It is, as long as the worker knows that he gets recorded.
