Looking for someone with advanced knowledge of logging packets from iOS/Android apps than cannot be logged using apps like Charles/Fiddler. I'm talking about certain apps that use the XMPP protocol and/or detect invalid certs and are difficult to trace using basic methods. Experience breaking signatures is a plus.

I would like to pay for a tutorial on how to repeat the process but could also pay on a per-app basis.

I will pay very well - please inbox me if you are interested

The best bet on Android is to dump debug info into Android log right where connections are made. You'll need to decompile the app into smali, add a few lines of smali code and repack it back into an apk. Done.
