I'm trying to throw together a small ecommerce site as quickly as humanly possible and then add to it later.

Does anyone here know if Google NEEDS to see an About Us and/or a Contact page on a website to view it as legitimate?

Can I get away with just one or the other, and if so which do I need and what content MUST it have?

You don't think you need it to rank.

Just add it when you have time.

Edit: holy shit why did I get thanks for this grammar...im ashamed

For Google ranking, I think, it is a good thing to have for e-commerce site, but it's not necessary.

It would probably look more legit / credible in the eyes of visitors to the site, but it won't impact your Google ranking

Ditto. Some people don't want to be contacted and I'm sure Google understands that.

This. It won't hurt your rankings, but you want them for your visitors.
Anyway, first priority should be traffic acquisition, optimization comes lates (adding contact and about page included).

The only part of Google that requires those pages is Google Adsense, but omitting those pages shouldn't hurt your rankings.

You do not need those. I hardly add About us or Contact us page to most of my websites and they rank very well. However, in case of ecommerce, it would be preferable as per Google reviewer guidelines in the long run in case of a manual review. Ecommerce is YMYL niche and so, contact us page is even realistically needed so that the customer can contact the seller in case of any dispute etc.

It could only indirectly hurt your rankings, since people may not return to your website. Is there any specific reason why you would want to avoid having those pages?
