I have some channels that are doing ok with adsense , they are not my videos but clippings of news channels. They probably should be fine under fair use act but there is always a chance. have 0 copyright strikes from 200 vids, but 1/ 10 vids do get claimed but just take monetisation without a strike. there are some interviews and songs in background that may get claimed at a later point.

I'm starting to make my own content videos now and i dont want to risk fucking up my hard work later down the line over this news channel.

i tried to set up a different adsense acc to use for channels with my 100% own content, but adsense was able to connect the dots and associate my new account with my other channels.

if i delete the news channel that currently has 0 strikes, will that make my adsense completely safe for using new channels with my own content?

Yes, if you haven't already been penalized then you will be fine using other channels. I'd delete the other channels as well just to be safe. It would really suck to lose your new unique content over it. Not worth the risk in my opinion.
