In the next days/weeks I'm going to put up some micro niche websites and later probably more. I'm wondering if it's save to register all these websites on the same adsense/analytics account and even one the same IP?
Will use xrumer and senuke blasts to build backlinks.

You can have as many sites on each adsense/analytics account as you want. However if you plan on using xrumer etc on your site I would not put analytics code on your website at all. Just asking for trouble, why give Google any more information than they already are able to collect and correlate. There is just no sense in helping to give them information about what you are doing.

Personally I keep Google code as far away from my sites as possible.

Is there any risk that if one website gets sandboxed all other websites in the adsense account is getting checked/sandboxed as well? Would you recommend using a different adsense account for each website or does it make no sense as they have my bank details etc anyways?

They are not going to let you open multiple account using the same bank info anyway so unless you are planning on spending a lot of time and energy on keeping your account separate there is no real reason to bother.

Honestly I would not worry about it other than keeping the analytics off your site and trying to add another stream of revenue to your sites as well so they are not completely adsense dependent. Add Amazon, a clickbank product or whatever seems to fit each site.
