Lets say I have an URL like

    example.com/keyword
    example.com/keywords

Keyword - Has 15000 monthly search volume.
Keywords - Has 5000 monthly search volume.

Would it be beneficial to SEO as the singular instead of the plural. Put in 301 redirects from plural to single. Then SEO singular going forward. Use 301 redirects and re-point all the old plural page names to the single page name.

You should really be able to rank for both with one page. No need for redirects.

Google doesn't need singular and plural it needs only quality and traffic.
So, no need to redirect those sites try to update your sites equally you get the correct results.
Maybe that plural site had low quality it can't rank well than that site.
There is no difference in singular and plural to Google, You must update every article in your site you know the difference.
