So what I want to do is remove the TITLE of the post, and the date it was posted on.. JUST one post. Then I want to sticky it, and move it up.

Is there a way to remove the title + date for just one post?

depends what theme you r using, if it has a featured function then yes.. otherwise code it urself ( which no offence but i dun think u wud be able to do ) but anyways if u do code it jus dun add the title and date for the featured function.

The easiest option might be to find a plugin that allows you to sticky specific posts.

You can then just add a few lines in your theme's css to hide the title and date for that post, if poking through the php for the template and plugin is too much trouble.
