Is it ok to edit or add to articles after Google indexes it?

I have numerous articles I want to clean up or add more length to it. I also want to redo the link structure within my site. The thing is Google already indexed all my pages, would it look weird?
 
Yes, in-fact redoing or touching up content improves it freshness and can help it rank better. As for the restructuring, I advice using 301's from old pages to new so not to lose link juice or indexed content.

Sorry I am not that experienced but what do you mean by using 301's?
 
With the help of 301 you can redirect your old page content to new without loosing PR, traffic on that post etc (Deleting posts is not a good idea)
 
Not to worry. You can edit it, if you think editing can improve its ranking.
