I do a lot of technical training videos for my youtube channel and I've done them for big name brand sites as well. The stuff I do for YouTube gets me adsense money (not bad, but not enough to buy lunch every day) and I get some royalties from the big name brand sites, but it's only a few K every quarter.

I was wondering if ClickBank would be a good platform to sell video training courses on technical topics. The target audience would be hobbyists, novice and entry level people.

It's a very good platform for training videos yes. I would recommend:

    1. Including an ebook with written instructions, and selling the ebook + videos as a package. You can also include the option of shipping physical copies ('deluxe' package) at a higher price. Even if you don't sell any deluxe packages, the higher price will make the price of the online versions look like a bargain.

    2. Consider developing these into a membership site, in which you interact with the customers, post regular videos, give them access to a forum, etc...

    udemy ?

I don't like CB after their recent policy changes.

And why not start your own membership site , nowadays it is matter of installing some plugins. + You control everything .

    Which are?

The only recent change that I'm aware of is that they are phasing out background check/spy products. This is due to legal pressure and likely all other US-based selling platforms will soon follow suit.

This is one of the best ways to monetize your videos/content. Many guys will tell you that having a membership site is probably one of the most profitable business models and since you say "you do a lot of videos", I guess you have enough material to do it on a monthly basis.

And if you build a small community also (with a private access forum included in that membership), you'll get a snowballing effect, because other will also share their experiences there. I've been a member of a such private forum and I found more useful tips posted by other members than the forum owner, so if you get to this point, you're on your way to good passive income.
