Say I bought 30 expired domains for my PBN and I used fake personas and different emails for each. Should I create social media accounts for each of those different emails and place one link a day for each of the sites?
Would creating social media accounts linked to the emails create a footprint for google if I am linking out toward my PBN's sites?
Just like PBNs, I assume I should NOT be connecting myself to my different social media accounts, just like I wouldn't link to my sites in my PBN?

If you mean about social media accounts of the individual sites, then it does not matter. Google might detect Google+, YT and Blogspot. Others do not matter. And if you are not using Gmail, then it does not matter anyway. Nobody can see the email behind the social accounts. And it is not forbidden either. You can create any many branded social or other accounts as you wish and I do not think there is any penalty for branded social profiles.
