I have my main business site (PR5/PR6) on a shared hosting package, and it shares it's IP with a bunch of other sites. It already ranks fairly well for the keywords I'm targetting, but I seem to have hit a bit of a brick wall.

I'm wondering if switching to a unique IP might help, and also if switching to its own IP might effect rankings negatively in the short term.

Yes, Using unique IP address for a website always helps in serp. If your site have PR 5 and it is hosted on shared hosting then I would like to suggest you for moving on separate IP address. Even though it may little effect on your traffic but not rank.
