If I get a backlink on a pagerank 7 website

I already have do follow backlinks on a lot of other websites in the range of Pagerank 1 through 8. But will it really help me if I get a do follow backlink on a pagerank 7 site that's not even related to my niche?

Thats acceptable so long as its only very minimal

Have alot of unrelated links and so far all is good

I would say that some diversity is good but, just make sure you don't start going overboard with irrelevant links.
