I updated homepage meta tag few days ago and both copies are visible in rankings. Why?

Check for any duplicate pages. Use URL redirection or canonical tags.

Create sitemap & submit sitemap in Google Search Console.

You query needs to be more specific.

It takes time for Google to update. Every time you search something you are connecting to a new server and not all of them update at the same time

I have a shopify store and updated meta tags on home page. But recently noticed that both the older and new copy of meta tag is visible in the search results. I also noticed the ranking getting down.

Sounds like Google has a beef with you, did you piss him off somehow?

This is normal you are going to see flux when you are making changes to a site especially when you are changing meta data.

Submit your website for google indexing.
    1. login your gmail id.
    2. enter https://www.google.com/webmasters/tools/submit-url in new tab
    3. Enter your website URLs and then submit them.

    AND

Fetch your website in Google web master after every On-Page activity.

And ranking Flacuation is common after doing ON-PAGE.
