every day I receive dozens of these messages through my contact form. they look like the typical spam like "thank for you your information, I enjoyed it"

I am not using wordpress so I cannot use any plugins.
I cannot noindex the pages because all pages contain a contact form so I would end up noindexing the entire website.

How can I stop the spam messages?

The most ideal solution is having a captcha enabled.
That helps in weeding out 95% of the automated spam.

I dont want to use captcha because its not user friendly and a lot of people will change their mind and not fill out the contact form.

even if you want to stay away from captcha , you can opt for simple questions like : "what color is blue" or 2+3= ?

well the answers are simple and if the visitor is pretty serious , he will contact you anyway...

If not, you will have to deal with SPAM!

the easiest and best way is to make a PREVIEW COMMENT option as the only option, and when someone hits preview comment - it refreshes to same page with a POST COMMENT button enabled
