First and probably the most important thing, I don't live in the US. I had a shopify store that was doing okay, until I got a takedown notice from a lawyer since some of my shirt designs had a logo in it. Nothing's happened yet but temporary closed my shopify store just to be sure.

So to stay out of the US copyright laws' reach I'm thinking about hosting my own store on a host outside of the United States, probably in China or Russia or somewhere. Is there anyway that lawyers from the US can reach me? I'm worry about a few things for example:
    - My domain is registered on namecheap, they might be able to seize the domain.
    - My store will have credit card checkout and paypal checkout, will they be able to seize the fund in my paypal account or work with my credit gateway provider to seize the fund in my payoneer account?

Find a host and domain registrar that are DMCA-resistant. There's a few threads on bhw about this. That should take care of your site not being taken down.
Payment processing may be a little harder. You could take btc, but it will likely hurt your conversions because getting btc may not be worth the effort for your traffic.
Look up what payment processors other high-risk people use. Perfectmoney and Webmoney come to mind. I've seen some use paypal, too.

You want to stay out of reach of US laws ? Simple:

    - Don't use a com domain, or any domain (I believe afnic servers are hosted in USA, so they can basically fuck everyone of it)
    - Don't write in english
    - Don't accept payment from Paypal/2checkout or any mass payment processor
    - Don't sell merchandise to US people (merchandising can be seized too)
    - Host your site in an offshore company.

as archon said, even piratebay got taken down, do it's going to be hard.

The payment part is a problem, even if you solve the rest. And even if you take the money out of the account, it wouldn't be a sustainable model. That's why it's relatively easy to make money that way, because most don't want to take chances against these big companies, I would suggest using your efforts to find another way of making money or you risk wasting your time and more!

You can never be 100% safe from this. Even if you use offshore host, you'd still leave enough footprints for them to track you down. I hope you live in a country where getting to you is hard/impossible for them, otherwise there's always a risk in doing this.

Easy way remove those items from your shop and continue what you do, No law firm is going to come behind you as its very expensive so chances of that is limited, unless they can get substantial amounts from you as claim or they think that they can make your website an example. as your website is having traffic dont loose it remove those items and sell new stuffs and make sure you dont respond to any emails stating that you removed etc etc , they will send reminders just ignore. if you try other options you will still have to depend on paypal etc no other payment option is familiar with customers so changing it is stupidity . Remove the items and move on thats it
