    - Log into your wordpress blog.
    - Under the setting option select Reading option
    - Type one under the option of "Blog pages show at most"
    - If you want to show latest post in your home page than under Front page displays select - "Your latest posts"

    CLICK ON SAVE CHANGES ... and you are done.

    No need of plugin or anything.

    I hope this will help you.

    @lalit_burma, I agree but this way he will get 1 post in the archive pages(tag, category) as well..

    The best way to do this is make a page as your home page, and your archives will show the latest posts you want.

    <?php if (++$count > 1) break; ?> place this code after <?php while (have_posts()) : the_post(); ?> on index.php file
