If a blog in the footer does not display what theme is being used or in the page source...

any other method of determining what is being used?

you look at the source code (Ctrl+U in firefox).

Search for a line that starts with "<link" or "<script" and has a "href" or "src" value that contains "wp-content/themes". After "wp-content/themes" you have a folder name that is the name of the theme. You search that in google.

Also you can just open in the browser the CSS file and you will have the full name of the theme in it and URL from where to get it.
