How Niche Down do We Need to Go When Trying to Build Topical Authority?

For example, if I want to build topical authority in the protein powder niche would it be more wise to niche down to whey protein specifically or would I be good writing about protein powders in general?

I've created sites taking similar approaches where I would talk about animals but then try to niche down to dogs first, and then after covering that topic with 100 posts or so I'd go to cats. Unfortunately though, these sites would never really take off or would typically just stagnate after a core update. I'm not sure if that had to do with my topical authority approach or other factors but I want to make sure I I have a better understanding of it all should I ever create another website again.

Animals is a very broad niche and you will need 10'thousands of articles to niche down.

instead, you can go for Dog niche and niche down to different breeds (Bulldog, Shephard etc)

Even like this will need many articles to cover the niche
