I have a question about longer anchors as I want to be cautious of over optimization.

Let's say my main focus keyword is "best weight loss diet" since I want to avoid over optimization but still want to help my main keyword, and I use the following:

    "Best fast weight loss diet"
"Best weight loss diet in 2017"
    "Best weight loss diet women"

How much do they help my main keyword? Is it going to be as helpful as just using my main money keyword straight up? And if i add variety like this, is it less likely to be hit by Google?

Google ranking is not only about the keyword. A keyword is one of the main factors for getting high in SERP.

    2. Long-tail keywords are more specific in their requirements, so you can write a more targeted and relevant ad to encourage the searcher to click. It will increase CTR

I understand these things about long tail keyword links, but would you say stuff like

    Best Christmas gifts for mom
    Best Christmas gifts 2017
    Best Christmas gifts cheap
    New best Christmas gifts

Will help my position for the search term "Christmas gifts" overall by a lot, little, or not help at all?

    Dear mate,

In your example, chritmas gifts is a general term. (Ex: The, a, for)

If you are using Best Christmas gifts in all places mean, there will be a chance to hit by google. This also one of the factors.
Instead of that you can shuffle keywords like these:
    1. cool Christmas gifts college students
    2. good Christmas gifts for rednecks
    3. great Christmas gift for my wife
    4. cool Christmas gifts handmade
    Good Luck
    .

Well, it can actually help to rank your website higher. But if we are talking about keywords with super high keyword difficulty and competition in the niche like "best weight loss diet", long tail keywords is one of the few ways to get your website on top.

They can help but use them smartly and not just through keyword stuffing.

Long-tails will help, but it is more important to get Google to your site, from a good neighborhood.
What the anchors are won't matter as much as what your content is about. Sure you could spam the shit out with the keyword "best weight loss diet" to an article about llamas, and it might rank for a bit, but then it would be penalized and wasted.
Avoid over optimization, do branded links, naked links most, then some keywords, long tails, LSIs and finally some genetics and you'll be much better off and have no worries.
