I do it in the car, walking my dog e.t.c. I come up with word's or idea's & write them all into my iPhone. Once home I analyse and check what their like.
I can only do this by sitting down 2 hours and hammering in keywords in different tools in order to see what they are like. Its really a tedious task. I wish I could get a glance at the google server keyword search director for just 1 day to see what info they hold
Whenever i read something and come across a word i note it down on my phone and digg in to it whenever i have time.
Flip through a magazine, read a book, read a phonebook, watch tv, live life.
Niches are everywhere, keep a pad and pen on you always. Best niche I've ever found,

i once had a problem, when i went to solve that problem through google i found my niche!!
I usually have my dog walk on my keyboard and check the related KWs in the Google Tool. Works like a charm.

To keep your brain flexible and nimble, you might be best served to start from a different point per each niche keyword search project. In random rotation, you could:
1) Start from the category. What topic areas are you interested in? What niche within that category attract you the most? That will help you go through the research process with more enthusiasm than you would if it pertained to topics you have no personal interest in. Your built-in knowledge or passion for the subject may result in brainstorming a new way to find profitable kws.
2) Start from the products. If you don't care about which niche or category, but you run across products that come across to you as well paying, thought out, etc., start from there. Coming in from this point means you have some faith that the creator of the affilliate, info, or physical product has done much of the niche work for you, making it a simple matter of finding available keywords consistent with that niche.
3) Start from the trend. Look at the news with monetization in mind. What does this or that development mean in terms of present or future buying patterns, consumer choices, and trends-driven problems? If there really is going to be a economic collapse somewhere soon, should I promote affiliate products for gold and silver, survival provisions, and so on? What niches are served by the current trend, and for how long?
4) Start from the money. What actual niches are the hottest performers right now? From your research, regardless of your interests, the product, or the news trends, what flat out is making money, period? You can build your list of niches based on the sales momentum of the most popular ones available.
I often get good ideas when i talk to other people. During the conversation they mention something which i connect with keyword research. Later i check those keywords. I often found some good ones.
The best thing is these are keywords i would have propably never thought about.
So think outside the box. Or even better let other people think outside the box for you

Ive only been doing kw research in earnest for a cpl months so Im stil training my 'niche sensitivity' but Ive found so long as I always have that little subroutine running in my mind as Im going about my daily life then so far its rarely failed to find me a niche which yields some juicy kws.
Id disagree with guy saying kw research is tedious I think its hugely fun when you are wading through kws in the hundreds of k search comp then suddenly you snag one under 10k comp. I usually scream with joy and fist punch the air a few times.
