Just open them in Notepad++. Note: Notepad++ != Notepad !
there are a million and one ways to do it
are the emails one on a line?
open the in something like editplus or even excel to see how many lines
are the emails not one per line?
open the file in chrome (just drag it into the browser), press Ctrl + F and put in an @ symbol. it will show you how many occurrences there are

I just have to post that i exactly had the same ideas nearly the same way structured in my head as i wanted them to write down....it's creepy your post is 99% the same haha maybe you are my twin or something
if its Seperated by comma,then you can also do another thing.
open in default notepad press ctrl+h type , at find and in replace field type ^p
& press replace all the emails will be seperated by a line,after that you can copy them in excel to count them
If there 1 by 1 lines just go to
Format > Turn Off Word Wrap > View > Status Bar
I think this guy has the right idea ^^.
Also if you had Scrapebox you could just load the emails in the keywords section and it'll give you the total count.
Separate names with a comma.
