So I notice a lot of niche sites that go something like "small-electric-canopeners.com", and they are about 10 pages built for just that. Does having such a narrow theme for their site help their SEO, versus having a general site about kitchenware?

So lets say I have three keywords I want to rank for.

    1. Steel Forks
    2. Battery Powered Rice Cookers
    3. Portable Refrigerators

Would building three separate sites 10 pages long all focused on those specific keywords help those sites rank, versus having just one 30 page site on kitchenware? What are the benefits/disadvantages? Why wouldn't we just build one massive website on everything?

The bigger the site the more work - the more you specialise, the more you can focus your efforts.
also if you have the main keyword in the domain it helps.

You can make your site about one particular niche and cut down on competition but
at the same time you forfeit the big traffic. Targeting smaller niches means less start up cost.
