Well you could get into nondisclosure agreements, but honestly when I've done ebooks for people, I've never thought about ripping them, they are customers and might use me again. Plenty of ideas out there without ripping yours. Of course that's me, for you, definetly check their rep/itrader/feedback and proceed with caution.

Go to getafreelancer (GAF) and post your project there. When it's live, then invite the best writers who have boatloads of positive reviews (i guess those big players don't steal your methods).
