Are the links there, if you check each guest post manually?

Check your guest post link manually as MisterF said. Check via Google if the links are indexed or not. If you are mentioning about third-party tools like AHREFS it will take time to crawl the new links.

Google takes time to update links in Google Search Consol. I just looked at my 'latest links' and it's showing April 27th. Nothing after that.

I have dozens of new links that are live and indexed but not showing up in search console. This has become more of the norm recently. Google seems to be really slow at showing the links in search console lately. I'm seeing times as long as 4-6 weeks between the time of indexing and the time it shows up in search console.

Give it time, if they are live and indexed they will show up in search console - in time. I think this may be a new way for Google to see if you are playing the system. If you don't see the links and you change something, Google will know and it could trigger a manual review for unnatural link building. Just ride it out and they will show up.
