I have like a hundred or near hundred websites across different hosting accounts and it's a big headache when you try to edit, transfer, anything... how are you guys dealing with this?

I would like to put them all on 1 huge vps with cpanel is that good?

It depends, if the pages are all legit and nice pages, then you can just use one vps. I use git to deploy, so it is just as easy as "git pull origin master" to deploy the changes. However if you have a network, don't go that route as you need the ip diversity!

Stick to 5 main Authority sites and build them slowly, its better in the long run and not such a pain in the ass to maintain.Cut out the sites making you the least money.Unless the income is passive there is no need to work with hundreds of sites.

You may like to outsource some workload. If content is quite a heavy task, ask a VA or Freelancer to help you. Backlinking has to be done personally. Finally, purchase some miscellaneous services to cover other parts.

The most important part in IM is passion, that's what drives success here :)

Weed out the low performing ones and keep and build on the most performing sites.

The way I see it, you have three good options here:

    1. Put them all on one VPS or dedicated server.
    2. Outsource the work to someone else. If you can't afford it, then your websites aren't worth the hassle.
    3. Pick out a more manageable amount of your top earners and sell the rest.

if you have hundreds of websites then VPS or your own dedicated server is also not a solution. Best solution would be to hire a VA or outsource your work. If you are serious about all your websites you can mange them yourselves but for that you should have loads of free time.

If they are hosted all over the place then a VPS sounds like a better choice. But there's some pretty cheap dedicated servers these days, so that gives you the option to grow (saves you from another migration in the future). Or, if you don't have the time/desire for that, find a realllyyy big Reseller account plan. :)
