Does having my server in Germany affect my performance a lot?

I am having my VPS set up in Germany. It is on a 10Gbit network. But my majority of target audience is from US. I know there will be some latency but will it affect my website performance a lot? The company offers rock solid services at a dirt cheap price so I kinda don't wanna switch.
 
Shouldn’t be a problem, as long as the server and your site respond fast to requests.

Run you site through https://www.webpagetest.org/
&
https://tools.pingdom.com/
and have a look at both the overall score, the time to first-bite, ssl performance (if any), and the waterfall to see which files may perform bad and optimize these.

As ussual, make sure to use caching. You could also try to implement a cdn and speed up the delivery of your sites assets.

Thanks, I'm yet to move my websites to that VPS. So these tests can't be performed. Also, I have setup cloudflare so I think it won't be a big problem. Just wanted to double check it. Will there be any disadvantages on the SEO side?

Not to my knowledge. Just make sure your language is set correctly.

If you happen to use WordPress, then this should automatically be taken care of by selecting “English (United States)” under Settings -> General -> Site language.

And for good measure I usually set the timezone to somewhere in the US, eventhough my server is also located outside of the US.

In Google Search Console you can set the target country to the US. This way Google will prioritize your search results for visitors from the US.

From my understanding this preference doesn’t mean that your sites results will not be available in other coutries, they just get prioritized for the US version of the big G.

But please do your own due diligence on this, because I may have this one completely wrong.

It should't make a different as long as you use correct TLD:s and that the language on the site is correct. If you have dedicated IP-addresses try to make sure that they are in your target country.
