I think you can do it. I wonder if there is a voice to text software where you can play the video and it automatically puts the content into text.

I'm not sure how safe it is, as Google does do voice to text on the videos. Turn on CC and you'll see the auto-generated captions. Not sure if Google actually uses that info though. TalkingPigeon seems to indirectly claim they don't.
Yup, they don't. My transcribed texts are ranking on the first page.
Then again, i cannot say that my claim is 100% accurate as my sample size is small. (15-20 sites)
Ranking aside, what about legal issues with the videos' owner? It'd be easy to prove that you copy their content word for word.
Not really if you edit it the right way. It depends on the niche as well, if it's some small niche then you can get into trouble with the producer but nothing that will cause a lawsuit in my opinion.
Niches like tutorials, politics or similar are the ones you can use this method in my opinion.
I work with speech recognition, transcriptions for speech recognition. The transcriptions are made by humans because no transcription machine is confident or with accuracy, they are in early stage development. I´m sure Google does not trust even it´s own speech recognition system to create a policy based on it.We all can see it´s mistakes.
Hmmm, my guess would be no. Surely that would be an insane job for Google but then again...it's Google. If they can't do it now you can bet that one day they will and that time will always be at the most inconvenient time for your business
