It helps qualify the customer better. Lowers risk of charge backs and targets your product better.

As fxphil said, the more you fill out the better you will seem to have good customer service.
Depending on your product, not all fields need to be filled out.

To rank higher on Amazon, make you sure you have a good description and good keywords.
I'm a seller on Amazon and that works out great for me.

You really do need to take the time to fill out all of the information so that the customer can
purchase the item with clarity. Not to mention you will gain more targeting views going to
    your products.

Should definitely fill out as much as possible. Some of the fields are searchable.

    Hi OP,

Amazon selling is one of my 2 main focuses. If you are talking about all of the fields in Seller Central then the answer is no. You are correct when you say that there are so many fields it can become mind boggling. Depending on your product, there are fields that won't even apply to your product. However, there are some overlooked fields that can definitely help you too. Creating a good, complete product page and description in Seller Central is only the beginning on Amazon. There are a lot of good products with good pages on Amazon that never see the light of day. Amazon search is it's own beast and it is unlike G. It is driven by sales and a few other factors that Amazon believes are proof of a product's market efficacy and which therefore make the product worthy of higher ranking in their search. Like I said, Amazon is a big part of my income so I live with this everyday. Feel free to PM me if you have other questions.
