Can anyone tell me what would happen if I had a domain with a 301 redirect and then I changed the 301 redirect on the first domain and pointed it to another?

    So

Domain one -> 301 redirect -> Domain two

    I then decide I want

Domain one -> (change) 301 redirect -> Domain three

Will the search engines reconise the change and will the authority / link juice be passed to domain three or will it stay with domain two?

301's don't pass 100% of juice, but yes. most equity is passed.
