They dont normally make any difference to rankings. However, if you are doing reviews for a few important products, you may want to use pages for the same, and posts to back them up.

Good question. I will introduce reviews on my site as well, but it already full of content, so I am going to use post, with few different categories for different product sellers. Best of luck!

Pages - I don't remember why, though. But once somebody brought up some good reasons why one should use pages and not posts.

I personally use pages , they work for me better. I like to see full article on each page instead of lot's of topics with few sentences just like it happens with posts, but it depends on person I believe.

Posts should be fine. Are you going to do a SILO structure on your site?

It's important to include dates in product reviews as it makes your reviews more reliable. You can go in and change the date every now and then to a recent date to make it look fresh to your readers and search engines. So, I suggest you use posts and don't remove the post dates.

Hmm ! For deeper niche product promote post should be fine. Main niche product promote through page should be goood.
