crypto transactions privacy with associated email?

Hello,
I have been doing online marketing for a long time but I am new in the crypto world.

I read everywhere that it's impossible to track the people behind crypto payments, which is one reason why some use it to commit illegal stuff. But wherever I try to sign up to create a crypto wallet, example on Coinbase, they all ask me personal data, like emails, name, phone, etc.

Doesn't that create an association between the crypto wallet and the person owning it, making them identifiable?

Please enlighten me :)

Coinbase is an exchange platform, not a wallet.

Metamask for example is a wallet. You are only required to remember a few words.
 
If you using the address issued by any exchange, it can be traced back to you. So, it is not 100% anonymous.

Ok thank you. So basically I should not set up my wallet with an exchange like Coinbase.

Could you recommend me where I should set up my wallet for privacy?

Coinbase is an exchange platform, not a wallet.

The coinbase wallet is different from the coinbase exchange/platform. The exchange has multiple wallets associated to your data. The wallet itself should not require your data.

I know it's unfortunate naming.

Coinbase is a centralized exchange. If you want to keep your identity anonyms than you should try crypto wallets like - Trust Wallet, Meta Mask, Ku coin, etc.
