Converting Images to WeBp format as suggested by google speed insights

I have analyzed my website with googlespeedinsights and it tells me to convert my PNGs and JPGs to WebP format, which is faster.
The suggested plugin is this one:
It all seems to be what I need for faster loading times, but the description of what the plugin does makes me slightly worried because they are a little techy and I am not:

By adding images to your media library, they are automatically converted and saved in a separate directory. Images are converted using GD or Imagick native extension for PHP.

When the browser tries to download an image file, the server verifies if it supports image/webp files and if the file exists. If everything is OK, instead of the original image, the browser will receive its equivalent in WebP format.

The plugin in default loading mode (via .htaccess) does not change file URLs, so there are no problems with saving the page to the cache and the page generation time does not increase.

Image URLs are modified using the module mod_rewrite on the server, i.e. the same, thanks to which we can use friendly links in WordPress. Additionally, the MIME type of the sent file is modified to image/webp.
also, this is what the plugin advise about the "bulk conversion" function:
Convert all existing images with just one click! This tool uses the WordPress REST API by downloading addresses of all images and converting all files gradually. This is a process that may take a few or more than ten minutes depending on the number of files. During this process, please do not close your browser window.

This operation should be performed only once after installing the plugin. New images from the Media Library will be converted automatically. For other images, e.g. from the /themes or /uploads directory that are not from the Media Library, you must start manual conversion after adding new images.

Question time!

  1. In your opinion is this safe/appropriate to do on my website?
  2. what will happen if I uninstall the plugin?

I use short pixel for this and it works just fine, it also gives a backup should you wish to roll-back.

If this is the one you are looking at, its fine and you can undo anything anyway.

As a rule maybe backup your site before you do anything in general, it's good practice.

If you have optimised pics already, webp won't really make that big difference, sometimes other formats are actually less in size,
Yet, you'll have no problem switching to it and even if you delete the plugin, the old original formats/pics will be shown up instead,
Just make sure to back up the website at least before the 1st change if you're worried

But for sure I will first do a backup!
