Hello, I'm hesitating between using cloudflare and using a self-built VPS as a Reverse Proxy. I don't know which one will be more anonymous.

Cloudflare is easily blocked by many websites. It depends on your specific use. It is best to use residential IP.

I mean I'm building to attach domain to website to hide server address

Cloudflare offers robust anonymity and protection, but a self-built VPS gives you full control. If anonymity is your priority, a VPS with properly configured privacy measures may be more suitable
