Some people say that if Google detects that a content has been produced by AI, it will penalize it, and it doesn't matter if the principles of SEO have been followed or not. what is your opinion?

People say a lot of things on the internet.
Not everything is correct, you will need to verify it yourself by trying and testing in short taking action.
Google doesn't penalize AI content or any content that satisfies the search intent and has a properly organized information on the topic.

Ranking is however dependent on multiple other factors like trust, authority etc .
So, to rank higher you will need to have all those factors checked and near to perfect.
In easy to rank niches however you don't always need everything to be perfect.

44 kws ranked in top 100 after only a week according to ahrefs.

Hopefully continues, how long does it take before Google decides to slap?

If Google wants to penalize you, it may do so after a few months
 
Did it suddenly fall after a while or not? What has been your experience of creating content for an English site with ChatGPT?
Actually you won't get exact answer on is it good/bad to use AI to write anithing on your website. The reason is that it depends on how experienced and skillful you are in prompting and making the text unique and more or less "human-written". As I worked in the most rival niche in SEO, it is really hard to make the text unique because of so many rivals use the same structure for the text and thus the entire block of text could be identical.

My advices for you is:
1) Master your prompting skill. Check https://www.blackhatworld.com/seo/these-chatgpt-prompts-will-completely-change-your-seo-game-free.1534078/from @SeedPhrase on ChatGPT prompting, it could be useful.
2) After that check the uniqueness of each text through content-watch and some other unique-checkers tools as it is crucial for content to be unique (if you work in a long run).

Try to write better prompts. Most people mess up while writing prompts for the AI to write content and their ranking isn't sustainable.

Yes I have English websites in different niches.
Have you only used AI content? How long has it been since you started the project? Have you had any sudden drop in your impression statistics?
