I had a question though - I know you said you set up by shopping centers, so how do the handle the problem of setting up on someone else's property? Do you give the rightful owner of the parking lot a cut or what?

The parking lot of shopping centers is usually considered a "common area". No one business owns the whole lot, it is shared by all in the center. Since there usually isn't one single owner that you could go to, you can slip by as long you dont do something to piss someone off, like cause a disturbance or hazard.
