I know its possible.. to spoof the client you are using.. but what about...
spoofing the smtp server.. that your mail is coming from.. is that at all possible...

Maybe.
Using the following methods.

Socks 4/4A/5
and/or
By sending email directly to recipients mail server.
Manipulate the header a little bit.

How? That's the million dollar question. Maybe others can answer that for you.

Using proxys and socks you can mask and obscure the source... You can also try remailers depending on the type the true source will be impossible to find.
