I recently found out that people can look up your IP address through your email which I'm not comfortable with. So from now on I've decided to send emails through my phone only using Sprint's network instead of wifi. I'm wondering if people will still be able to look up any information on my location, even if it's vague.
Also I've heard of using proxy servers and VPN networks. Will these really work? And do I need to use them constantly or only when I'm sending the email?

Proxy or VPN will definitely work. A cheap proxy or VPN subscription will probably be a good investment so you can use email on your computer and not just your phone. BTW just because you're on a mobile connection doesn't make it any more anonymous than your home broadband. Unless you're using non-registered pre-paid SIMs that is...

I never heard of it, so I googled it. I was surprised, that you actually can see people's IP address. I thought more mail servers hide your ip. Generally you should trust the people you send emails to. If you don't, sure you can always use proxy servers, they do work pretty well!

just google it and there are some articles about it. The IP address is stored within the email header. Honestly I didn't believe either ...

I don't think it's the case with all email service, just some. Still, if you are emailing someone then you sort of have a relationship, so who cares if they know where your emailing from?

Yes they can see your ip, its stored in the mail header.
Get a vpn (look up nvpn) or a vps server (you can go offshore to be safe).

Yes, it is in the headers. Certainly if you use SMTP to send your mails. You need a socks5 proxy to hide this, or a VPN.

If you use webmail services it might be not.
Gmail does include it though, based on the ip adres of you webbrowser (so if you use a good proxy they will only see the proxy ip)
I don't know about other webmail services like outlook.com etc.

What can they do with this IP ? If you are sending a lot of spam and people complain at the abuse contact of your ISP, the ISP can see which customer was using that IP at that certain time and reference it back to your personal information. In essence the people complaining will never know who you are (privacy laws), but the ISP might disconnect you.

Abuse contact for an IP address can be looked up on sites like ripe.net, arin.net etc

However, if the complainer files charges against you with the police, the police can subpoena your ISP to hand over your personal information, and then you can be arrested etc.

So if you are sending spam, is it important to hide your IP adres ? YES. This is why the very big spammers use hacked computers all over the world (aka botnet) to send out their spam, this way it seems to come from everywhere and the police can look up personal info all they want, the people who used the ip adresses at that time are unaware of the fact that they were sending spam at all.

If you are just mailing normal everyday mails to your friends, relatives, business partners, is it important to hide your IP adres ? Not really. They probably won't file complaints with your ISP and even if they do the ISP will never give out your personal information without a subpoena, and the police is not going to subpoena you for sending normal mails.

Please beware if you order a proxy, vpn, vps, or something else to hide your IP, they can still subpoena the provider who sold you these services, and they might give out your info, like creditcard number or paypal account, and even if you fake this, they can still see what your original IP was.

No, its not possible, gmail hides the ip while sending mail. So you cannot see the sender's ip on gmail.

Both the Sprint 3G connection and the wifi reveal your location one way or another, it's not safer using the cell phone connection.

I'd still like a clarification, why does it matter if the person you're emailing can see your IP address?
