can i just upload plain text, like paragraphs or content seperated so youtube will understand my video more and possibly have my videos ranked higher higher or respected

not use timestamps, anythng to to do with captions, laughter, and the timing would be way off but google still would understand it

you can try it in the description of your video.

yes, you can use that and it has a positive impact on your SEO score, there is a software called "Subtitle Edit" it will allow you to take a text, break it to lines and add time codes, so you can export it to .srt format and upload it to your video
after you play with it it's easy to use and it will help YouTube to understand more about your video, that will help to get more traffic since some of the text you will use may get to rank on YouTube search results and some text will attract more suggestions from similar videos.

a few years ago when i first tested that, i added some words that don't exist to the captions text, later when i searched for those words, they got indexed very well.
