I was thinking of creating quite a few black hat sites to gain quick traffic for a certain niche. Once the site has the traffic, I was going to place nofollow links/banners to my main site. I receive quite a bit of traffic on my white hat main site and I want to make sure I won't get hit by Google in anyway for this. Any insight on this would be very helpful!

I have seen it done many times and it seems to be fine, since you have control of the black hat sites if you see the white hat site tanking simply remove the links from the BH site. Google then has no reason to continue to penalize you.

**Edit also consider how many Black Hatters use black hat to sites like bodybuilding dot com or Amazon, Google shouldnt penalize other white hat sites due to a few black hat affiliates sending traffic there.

There's no such thing as a White/Black Hat Site. The methods you use for ranking can be perceived as white or black hat but the sites themselves are never one or the other. One link from your 'Black Hat' sites to your white hat site probably wont have much of an impact on ranking UNLESS by doing so you are leaving footprints to indiciate to Google that you are the owner of both these sites.

If you want to be extra safe make sure both these sites are on different hosting too.

What you could practice doing is tier link building so your money making sites remain in high quality with unique content
but your tier 2 and 3 sites are more spammy and you can test out different link networks on them for link juice.
