I've seen people advocated of publishing PDFs to document sharing sites for the SEO purpose, but this was mainly from sales letters of people selling a software or similar service that publish your PDF to such sites.

These days I have looked into these doc-publishing sites (box.com, docshare.com, etc.) and all of them convert your PDF into a flash presentation. Since search engines cannot crawl the flash I do not see the benefit from SEO perspective, because they cannot detect your backlink even though it exists in the document.

Am I missing something or the PDF publishing is useless for the link building?

Please review the following link regarding Google and Flash files: http://support.google.com/webmasters/bin/answer.py?hl=en&answer=72746#1

I also do not see any benifits of that.
But there must be something that is making people do the thing over and over again.

Don't publish the PDFs to those sites. Only publish to sites where they'll stay PDF, and Google will index them.

Here is the meat of the answer from the article assphuck posted. As quoted by google,

"Googlebot can also discover URLs in SWF files (for example, links to other pages on your site) and follow those links. We'll crawl and index this content in the same way that we crawl and index other content on your site—you don't need to take any special action. However, we don't guarantee that we'll crawl or index all the content, Flash or otherwise."

I looked at about 10 doc sites and they either convert the PDF into a flash or allow a download of the PDF file, but I didn't find a site that publish as a plain pdf. Let me know if you know of it.

Well, the point is that they don't guarantee.
    Here's an example:
    http://www.myplick.com/view/8swRGXJKN3C/watch-grammys-2011-online-streaming-

If I look into the source of the page there's no clickable link so I doubt google will see it neither.

there's some Seo benefit - plus often they will outrank your website until you move up the rankings and people read them and yes they click links... all I gotta do is check my analytics to see this .. thanks.
