How hard is it to rank over these hotel sites and is the commission high enough?
I want to buy few domains and put some content on it and then just refer people to booking.com

Once I tried this. Bought a domain with BestHotelsIn(CITY).com. It was very hard to rank, because the competition is fierce. Made 2 sales somehow. How much did it make me? About $20, which are still in Booking.com partners site, because there's a $100 threshold.
I didn't do much of SEO, maybe that's why I failed. But the truth is, I believe that there's lots of money to be made in this niche.

It's only hard because Travel industry is Huge, and there are the big players, which want all the money. Just type in google "stay in [CITY]". You' ll see that there are tons of adverts first. They cost a lot. Because travellers spend a lot. Tickets and hotels are expensive.

I have colleagues who have been making money with booking.com. SEO can play a huge part in achieving success on this one. The travel niche, though very competitive, is not that difficult to make money from. -Micah

You don't necessarily have to rank over them, but you have to rank differently from them,
this might be adjusting your social media posting to fit particular trends, or hashtags,

You could be ordering some high quality articles from @NatashaNixon

Also as @ContentWriter has explained, SEO is important, so you will have to look into that.

I worked with a friend a couple of years back on a travel site, although it wasn't booking.com, it was a travel affiliate site.
The articles were all high quality, and through a mix of SEO, and display advertising, we made some cash.

I did something like this 10 years ago for hotels in the local area. I used hotelscombined.com if I remember correctly because they pay for someone searching and viewing a hotel instead of booking a room. They payout varied and was around a $1 per view which is not a lot compared to booking but found it to be profitable. Regardless, SEO is key. I can only imagine how much more difficult it is now to capitalize.
