301 Redirect From HTTP Only

Hoping someone can clarify something for me. I'm looking at an auction domain currently and I've noticed the metrics (TF, CF, referring domains) from the http site appear better than the https. Can I simply 301 direct just the http version of the domain and not the https version to benefit from the better metrics? Thanks.

Technically you can, yes. You should be able to do it from your registrar control panel, they only redirect the http version in most cases.
